As children we all learned that breakfast is the most important meal of the day. But as we get older we find that fact more and more difficult to remember. It’s only natural that the older we get the busier we get and the more things we toss to the back burner. I myself ditched the breakfast train by my first year of high school. Having to wake up at 6am and catch a bus in twenty minutes made breakfast on the last thing on my mind. For one it was too early to be hungry, high school lunches can be as early as 10am, and I didn’t want to trade sleeping in for breakfast. But unfortunately that habit followed me into college. Now, even though most students only have 2-3 classes a day in college, it can still feel more exhausting than a day in high school. So with this mind, skipping breakfast made the day harder. When your stomach is lacking food you’re also lacking energy and focus. Because of my new living situation I now live with one of my best friends who is huge on breakfast. Luckily, this has rubbed off on me and now I can’t go back. And now, I want to stand on a soap box and inform as many people as possible. So, without further ado, here are some easy breakfast recipes.
Classic Egg Sandwich
This one is my personal favorite, so naturally we’ll start off with it. For this you’ll need as many eggs as you’d like, salt and pepper, and onion powder. You may think the onion powder is a bit odd, but I consider it my secret ingredient. For each seasoning just sprinkle a bit into a bowl of cracked eggs. Then once the eggs are on the pan add some shredded cheese and scramble. Once your eggs are cooked to your liking place it on some toasted bread with a spread of mayo and enjoy!
Greek Yogurt & Protein Cereal
If you find yourself with not enough time to turn that stove on, this is a great option. For one, you can prepare it the night before and enjoy before you’re off to school. Or, if you have to run out the door, it’s a very easy breakfast to take on the go with you. For this you’ll just need greek yogurt and protein cereal. Personally, I prefer plain greek yogurt, as it is a neutral backdrop for the cereal. This is also a quick breakfast full of great nutrients to get your day started with.
Avocado Toast
There was a point in time where avocado’s were all the rage. And while most restaurant want to charge you $12 minimum for a piece of toast with smashed avocados, you can easily do it yourself from home. All you need is one avocado, mash that up and then add some salt and pepper. If you want to go the extra mile in flavoring add some lemon and chopped onions. Once you’ve finished spread that onto as many pieces of toast that will fit it. If you find yourself with more time you can go ahead an add a sunny side up egg. You can again, add some salt and pepper, then pour the unwhisked egg into the pan. When it’s done go ahead and add it onto the toast with your smashed avocado!
Pancake Breakfast Bowl
When I first saw this recipe I was very hesitant. Especially, because of the cooking process. It’s a one bowl meal, meaning you’ll only need one bowl to make it. However I was proven wrong luckily. Since this is on the sweeter side for breakfast, I’d recommend this as a weekend treat! And a super easy one at that. All you need to do is add some pancake mix, milk and mix and put in the microwave for 2 minutes you’ll have yourself a great breakfast. To have some balance you can add yogurt and berries with peanut butter. This will give you a quick and fluffy pancake that requires minimal dishes. As a busy college student myself, I’ll do anything to avoid using dishes (even using a paper towel) so this recipe has piqued my interest and I will be trying as soon as possible.
Many of my peers who skip breakfast naturally end up waiting to eat until dinner time at around 6pm. Usually this meal tends to be very large and very high calorie, I know from first hand experience. There is a number of reasons this is never a good idea. For one, it is simply not a healthy eating habit. The human body needs food so keeping it from food for long periods of time is never a good idea. The second reason is that eating one large meal after hours of fasting can cause digestive issues and slow down your metabolism. The final reason is that the later you eat the closer you will still be digesting during bed and have a harder time falling asleep.
At the risk of sounding like your mom nagging you on the phone on a Sunday night, I’ll say it. You have to eat breakfast and it will change your routine for the better. Starting the day off fueled can drastically change its trajectory. Last year I could never focus in class and was always very irritable and sluggish. However, after I started incorporating a balanced breakfast into my morning routine I saw the difference immediately. There is a new pep in my step that is definitely thanks to this!
