So it is no surprise that the prices of many things have increased, and grocery shopping will run you up a pretty large bill. Recently, when shopping for eggs, I am shocked when I see the prices for just one dozen. Thankfully for me, I can make it last for a while so I don’t need to buy that often, but I have been thinking of other alternatives that will not cost as much and still be a great meal to start your day. Although eggs have a lot of protein, there are plenty of nutritious and delicious no-egg breakfast recipes that can help you start your day right without breaking the bank, and can also get you your aesthetic Instagram story pic. Whether you’re looking for protein-packed options, quick meals, or something sweet and indulgent, I’ve got you covered.
Breakfast Vs Brunch
When it comes to morning meals, there’s often a debate: breakfast vs. brunch—which is better? I feel like it depends on the day of the week, schedule, and plans for the day because I am a big fan of a brunch date with my friends in the afternoon. The best part is having the option to choose between breakfast and lunch foods or even both. A good burrito, B.L.T sandwich, or even a breakfast burger with a fried egg on top. Brunch meals will often be able to satisfy your hunger for the rest of the day with heavier dishes. Some of my favorite brunch places are Brunch Snob and The Henry. These places have extensive menus with options that will make everyone happy. Another reason why brunch can be so fun is the drinks, from lattes, juices, and mimosas. Brunch is a fun occasional meal out with your friends or family but breakfast will set the tone for your day, and that is most important when you have a long day of work, school, or activities in front of you.
Easy No-Egg Recipes
One of the reasons we eat eggs so much is for the protein, low carbs, and calories. Many other substitutes can taste even better and you won’t even have to break the bank stocking up on eggs. The first is the staple of avocado toast, which has been very popular over the past couple of years, and it is as simple as it sounds, Avocado and toast. This is not the most filling with just those two ingredients, which is why I like to spice it up. One of my favorite ways to elevate it is the chest bacon smashed potato. All you need is a large potato, cheese, avocado, cottage cheese, bacon, and some simple spices. You start by boiling the potato to soften it, then you smash it. I like to use a mason jar, then in a pan, heat it with some oil, then throw in some shredded cheese. Next, you put the potato on top and let it cook together, then you can assemble it all together. Mash your avocado and cook your bacon and then you have an elevated avocado toast! This is a great breakfast item, you don’t need eggs and you can add whatever toppings you like on top. Another no-egg alternative that I love is tofu, you can season it to taste however you like and it is also very high in protein. One of my favorite recipes using tofu is a classic breakfast burrito. All you need is tofu, potatoes, bacon, cheese, and tortillas. The key is to cut up and cook the tofu so it is like scrambled eggs. Once everything is cooked, you just assemble it in a burrito and pair it with your favorite hot sauce or salsa.
Meal Prepping
If you are like me and are not a morning person, it can be hard to wake up extra early to cook a good breakfast, this is why I am sometimes running out of my place with a banana and some juice and calling it a day. However, I have discovered the ultimate life hack to avoiding this dilemma is meal prepping for the week ahead. A breakfast skillet meal prep is one of my favorites, and it is very easy, you just need to cook and prepare everything beforehand, then it is very easy to reheat in the morning when you don’t feel like cooking. The ingredients for this are 4-5 yellow potatoes (peeled & cut into small squares) 4 chicken sausage links sliced 1/2 red bell pepper diced 1/2 green bell pepper diced 1/2 yellow onion minced 4 minced garlic cloves 1 small jalapeño minced Avocado oil (for cooking) Season with: 1 tbsp paprika 1 tosp garlic powder 1/2 tbsp salt 1/2 tbsp pepper 1/2 tbsp chili flakes 1/4 cup of water For toppings: Half avocado per meal Your fav hot sauce I like to use Cholula or homemade salsa verde. Lastly, shredded cheddar cheese, and chopped cilantro. You can put all of the ingredients together in meal prep containers and put them in the fridge for the week, and they are good to last! The best part is you do not have to spend money on any eggs. I find pretty much all of my recipes for breakfast, lunch, and dinner on TikTok, and I even have a collection of saved ones to try, so when in doubt, you can get even more ideas on there.
At the end of the day, breakfast is whatever you want it to be and even if you don’t like to cook that much, it can be easy if you plan your recipes! Eggs might be a staple, but there are so many other options that are just as delicious, filling, and way more affordable today that you can try until egg prices go back down. Whether you’re a meal prep pro, a brunch lover, or just need something quick in the morning, these no-egg recipes have got you covered. Plus, they’re Instagram-worthy, so you can still flex your breakfast game. It doesn’t hurt to pair them with some fruit and yogurt to be extra filling.
